Honeydew Mint Sorbet

  • ¾ cup water
  • 1 cup sugar
  • 2 fresh mint sprigs
  • 6 cups honeydew, cubed
  • 1 lime, juiced

Instructions for

Honeydew Mint Sorbet

  1. In a small saucepan, heat water and sugar over medium until sugar is dissolved.
  2. Add 2 sprigs of mint and set aside to cool and infuse.
  3. Add honeydew to a food processor and blend until smooth.
  4. Remove the mint springs from the simple syrup and compost.
  5. Combine pureed honeydew, lime juice, and mint syrup in a shallow container and place in the freezer.
  6. Freeze for at least 6 hours or overnight.
  7. Shave and serve with fresh mint
