Sauce Napolitano (Fresh Tomato Sauce)

Many years ago, I was invited to have a traditional multi-course Italian dinner at a friend’s home. I learned this recipe as I watched her mother make this simple tomato sauce and it changed my life forever.

Ingredients for

Sauce Napolitano (Fresh Tomato Sauce)

MAKES ABOUT 1 1/2 CUPS

3 cloves garlic, smashed and roughly chopped

⅓ cup olive oil

12 Roma (or plum tomatoes) cored and cut into medium sized cubes

Salt and black pepper to taste

Instructions for

Sauce Napolitano (Fresh Tomato Sauce)

Heat the olive oil in a saucepan over medium heat.

Add garlic to the heated oil and sauté until fragrant, about 1 to 2 minutes.

Add  tomatoes to the saucepan, stirring to coat them in the oil and garlic mixture.

Season with salt and pepper to taste.

Cover the saucepan and allow the tomatoes to cook over medium-low heat until they begin to soften, stirring occasionally. This should take about 8 minutes.

Once the tomatoes have softened and released their juices, taste the sauce and adjust the seasoning with additional salt and pepper if needed.

Remove the saucepan from the heat and let the sauce cool slightly before serving.

Serve this Napolitano Sauce warm over your favorite pasta, grilled meats, or as a dipping sauce for crusty bread. Enjoy the fresh and flavorful taste of this homemade tomato sauce!
