Blood Orange and Purple Brussel Sprout Salad with Date Vinaigrette

Instructions

Make the dressing

Add all ingredients to a medium mixing bowl and whisk to combine. Season to taste with salt and pepper.

Assemble the salad

On a large serving platter layer blood oranges, Brussel sprouts, and dates.

Bring it all together

Drizzle salad with 1/4 cup of dressing, using more to taste, and top with freshly shaved parmesan. Serve alongside roast chicken or fish for dinner or as a base for a grilled chicken salad perfect for lunch.

FOR THE DRESSING (MAKES EXTRA)
2 teaspoons whole grain mustard
1 lemon, zest and juice
1 tablespoon date syrup or raw honey
1/3 cup extra-virgin olive oil
1 garlic clove, minced or grated
Salt and black pepper to taste
FOR THE SALAD
2 blood oranges, skin removed, cut into 1/4" slices
2 cups purple brussel sprouts, shredded or leaves separated
6 Medjool dates, pits removed, chopped
Parmesan cheese for shaving on top
