Gluten-Free Vegan Maple Cranberry Granola
Preheat oven to 350 degrees F.
Line a baking sheet with parchment paper or a silicone baking mat.
Combine all the ingredients in a large mixing bowl. Toss to coat using a wooden spatula.
Spread the mixture evenly on the prepared baking sheet pressing firmly.
Bake 25 minutes or until golden - do not stir while baking!
Remove from the oven. Let cool completely before breaking up any large clumps.
Keep in an airtight container for up to 1 month.
